Making Whoopee

I got a craving for whoopee pie last night. After all, the song is about getting married … among other things. I cobbled together a couple of recipes and tweaked it to make something that’ll make you moan with pleasure.

Swampgirl’s Whoopee Pie

For the cakes:

  • 2 cups flour
  • 1/2 cup unsweetened cocoa powder
  • 1-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 stick butter, at room temperature
  • 1/2 cup sugar
  • 1 cup milk
  • 2 teaspoons vanilla extract

For the filling:

  • 1/2 cup milk
  • 1-1/2 tablespoons flour
  • 1-3/4 cups confectioner’s sugar
  • 1 stick butter, at room temperature
  • 1/2 teaspoon vanilla extract

To make the cake:

Mix dry ingredients together with a fork and a medium-sized mixing bowl and set aside. With an electric mixer, cream together butter and sugar. Add dry ingredients alternatively with milk, mixing well after each addition and scraping the bowl. Add vanilla and mix well.

Drop by rounded teaspoonful on cookie sheets. Bake at 350-degrees for approximately 10 minutes. Cool completely.

To make the filling:

While cookies are cooling, mix milk and flour in a small shallow saucepan on medium heat, stirring constantly until a paste is formed. Remove from heat and cool for about 15 minutes in the refrigerator. When cooled, combine this paste along with butter, confectioner’s sugar and vanilla in an electric mixer. Beat on high for about 3 minutes, until fluffy.

To assemble, spread a rounded teaspoon of the filling on the bottom side of one cake and top with another cake. Repeat.

    Yummy these look soooooo good! I think I might have to make these. I’ll tell my DH I want some Whoopee Pie…won’t he be disappointed when I give him cookies LOL.
